Cocktail Fridays - Cinnamon Amarula Iced Coffee

The Cinnamon Amarula Iced Coffee is a cocktail created by private chef Lungile Mbangi at the Great Plains Zarafa Camp in Botswana. To recreate this deliciously rich and strong flavour, be sure to source coffee made from African origin beans. It is the perfect drink to keep cool during the summer heatwave!



Cinnamon Amarula Iced Coffee

Ingredients

African Origin ground coffee, medium roast: 1 heaped tablespoon Amarula Liqueur: 3cl Boiling water: 150ml

Boiling milk: 1 cup

1 cinnamon stick

Ground cinnamon to finish


Equipment

2 coffee cafetieres

A glass tumbler

A sieve


Method


BREW

Put the coffee in the cafetière and pour ove rthe boiling water. Leave to steep for 5 minutes. Press the plunger down slowly and pour the coffee into a container. Add the cinnamon stick and refrigerate for 30 minutes.


Stir

Remove the cinnamon stick from the coffee, stir in the amarula and pour into the tumbler.


FROTH

Pour the boiling hot milk into the other cafetière and press the plunger up and down vigorously to froth the milk.


Garnish

Drop the ice cubes into the coffee and pour the milk froth over the coffee.

Serve with a dusting of cinnamon. Safari optional!
