Midsummer Drinks at Sabine Rooftop Bar

If you're a Londoner, then you've probably heard of St.Paul's Cathedral. It's resplendent white dome is an iconic landmark and makes for a beautiful view from a rooftop bar - just like at Sabine in London.



This week, Davide Valvano, bar manager and mixologist at Sabine is introducing two midsummer cocktails recipes which are refreshing, fruity and simple to make. The Whizz Fizz and Midsummer Margarita are the perfect summer drinks for a night al fresco with the girls. Grab the gin, get squeezing on those lemons, top up with some Prosecco and you've got yourself a professional tasting cocktail to sip on from your own rooftop (wait...and if you don't have a rooftop, just visit Sabine's)!

WHIZZ FIZZ

Ingredients

Gin rhubarb & ginger : 15 ml

Crème de Cassis : 10 ml

Fresh lemon juice : 10ml

Elderflower cordial : 5ml

Top with Prosecco or sparkling wine


Equipment

Cocktail shaker (with fine strainer)

Chilled cocktail glass



Method


MIX

Add the gin, crème de cassis, lemon juice, and elderflower cordial to a cocktail shaker.


SHAKE

Give the ingredients a good shake (minus the fizz!).


GARNISH

Pour the cocktail ingredients through a fine sieve and into a champagne flute. Top up with Prosecco or sparkling wine. Top the glass with a Maraschino cherry on a toothpick or coat the glass's rim with cherry juice.

Midsummer Margarita

Ingredients

Volcan de mi tierra tequila : 40 ml

Cointreau : 20 ml

Fresh lime juice : 10 ml

2 Rasperries

Rosemary sprig

Pink salt


Garnish: Burn rosemary sprig, leave it on the rim with a raspberry/ pink salt.


Equipment

Cocktail shaker (with strainer)

Chilled coupe or sombrero glass


Method


MIX

Add the tequila and cointreau to the cocktail glass.


SHAKE

Give the ingredients a good shake (minus the fizz!).


GARNISH

Pour the cocktail ingredients through a fine sieve and into a champagne flute. Top up with Prosecco or sparkling wine. Top the glass with a Maraschino cherry on a toothpick or coat the glass's rim with cherry juice.


To finish the margarita off, pierce the rosemary sprig through the fresh raspberry, burn the ends of the the rosemary to release some its aroma and create some smoke, & place it across the top of the glass.
