Cocktail Fridays - The Selinda Gold Cocktail

The Selinda Gold Cocktail is an exclusive recipe created by Michael Jones, the general manager of Great Plains Selinda Camp in Botswana. Inspired by the sweetness of orange and the golden sun that sets over the African bush, this cocktail will make you feel like you're on safari, when in fact, you're just in your back garden. Permission to dream though right?


Here is the recipe as per Michael Jones and there's no other man at Selinda Camp that loves an evening of mixology more than him. Top tip: Use your granny's best marmalade. And if you've run out, we recommend you go to Seville and get some. Or just fly straight to Botswana - Michael will make you one!



THE SELINDA LIQUID GOLD COCKTAIL

Ingredients


Water: 750ml

Don Papa rum: 50ml

Chamomile: 2 tea bags

Cloves: 2 whole cloves

A pinch of cinnamon

Sugar: 1 teaspoon

Seville Orange Marmalade: 1 heaped teaspoon

A slice of lemon or orange infused with vanilla essence

Ice


Equipment


Medium saucepan

Cocktail shaker (with fine strainer)


Method


BREW

Put the water, tea bags, cloves, cinnamon, sugar and gently boil together in a saucepan until you have reduced the liquid by 2/3. Turn off the heat and set aside to cool.


Stir

Mix the rum, marmalade and a cup (180ml) of the tea mixture in a cocktail shaker with ice.


SHAKE

Shake and finely strain into a martini glass.


Garnish

Garnish with a candied lemon or orange slice infused with vanilla essence and enjoy!
