Corn in a cup

Known as Elote en vaso in Mexico, this street food can be found in Mexican cities sold be little street vendors who specialise in one thing - corn. Corn is a huge part of the Mexican diet and it constitutes almost every staple from the humble taco to tortilla crisps we make nachos with.

Recipe


Ingredients 2 people


  • 1 can of sweetcorn

  • Single cream (dairy or non-dairy, eg. my oat cream)

  • A knob of butter

  • Tabasco / hot sauce

  • Chilli powder

  • Feta

  • half a lemon or lime

  • 2 cups or glasses - for the real deal, serve in a plastic cup!


Method


  • Tip your sweetcorn in a pan with a bit of water and bring to simmer. Heat through.

  • Once hot, strain the corn and put half in each cup with a small knob of butter.

  • In a separate bowl, squeeze half a lemon.

  • Whisk half of the cream into the lemon juice until combined.

  • Pour half your cream mixture onto each corn cup, adding a dash of tabasco.

  • Crumble the feta onto the top and sprinkle some chilli powder on top.

And there you have it, a warming, healthy snack that transports you to the streets of Mexico!
