Known as Elote en vaso in Mexico, this street food can be found in Mexican cities sold be little street vendors who specialise in one thing - corn. Corn is a huge part of the Mexican diet and it constitutes almost every staple from the humble taco to tortilla crisps we make nachos with.
Recipe
Ingredients 2 people
1 can of sweetcorn
Single cream (dairy or non-dairy, eg. my oat cream)
A knob of butter
Tabasco / hot sauce
Chilli powder
Feta
half a lemon or lime
2 cups or glasses - for the real deal, serve in a plastic cup!
Method
Tip your sweetcorn in a pan with a bit of water and bring to simmer. Heat through.
Once hot, strain the corn and put half in each cup with a small knob of butter.
In a separate bowl, squeeze half a lemon.
Whisk half of the cream into the lemon juice until combined.
Pour half your cream mixture onto each corn cup, adding a dash of tabasco.
Crumble the feta onto the top and sprinkle some chilli powder on top.
And there you have it, a warming, healthy snack that transports you to the streets of Mexico!
