Date and Walnut Muffins

No added sugar muffins with healthy rich in fibre dates and walnuts. This is an easy to make recipe, perfect for kids and adults alike.



Date and Walnut Muffins


Ingredients

Makes approximately 8 muffins


200 g Dates (stones removed)

185 ml Fresh milk (dairy or vegan)

120g White or whole wheat flour

75g Butter or 120ml of oil

1 teaspoon Bicarbonate of soda

1/2 teaspoon Baking powder

60g Walnuts

1/2 teaspoon Bicarb of soda

Pinch of salt

Muffin tin


Method

  • Simmer dates in a bit of water until soft. Using a fork, mash the dates until smooth.

  • Preheat the oven to 170C / 160C fan.

  • Melt the butter.

  • Add the milk and melted butter to the date mixture and mix until smooth. ( You can just use a blender to mix the dates, milk and butter if you prefer).

  • Mix dry ingredients (flour, bicarb and baking powder, salt) and add to wet ingredients bit by bit until uniform. Chop the walnuts and add to the batter.

  • Grease a muffin tin and fill 3/4 of each muffin hole with the batter.

  • Bake for 15-20 minutes on 170C (160C fan) until knife comes out clean.
