Banana pancakes are a childhood favourite. Perfect to use up ripe bananas, this recipe requires minimal ingredients and takes minutes to make. You can even prepare the night before and store in an airtight container in the fridge. The bananas might brown a bit but it's totally harmless! These pancakes have been a family favourite since forever, introduced to us by the lovely Isabelle PC - a dear family friend. And now we are proud to support Riza Produce (a sustainable food brand based in Greece founded by a family friend's niece called Joy) to showcase their delicious honey and tahini alongside our recipes.
Riza Produce have just added a new Pine tree honey and a tahini to their ethically sourced product line made in Greece. The first Riza Honey is an ethically sourced fire tree honey made in the greek Peloponnese. Part of a limited production, what makes this honey so rare is that the bees collect the sap of fire trees rather than flowers to produce this rich, high quality honey, packed full of beneficial nutrients.
Interestingly, the honey is called honeydew, since the bees collect the sap of fir trees rather than flowers. Not only is it low in pollen so great for allergy sufferers, but it is also rich in minerals, vitamins & oligosaccharides which help promote a healthy gut. Riza honey is raw, unfiltered and naturally low in sugar making it the healthiest of honeys out there!
The honey has a clean flavour that is not overpowering and it's smooth consistency means it is a great complement to sweet and savoury dishes. Perfect for drizzling over pancakes! Recipe
Serves 2 people (8 small pancakes)
Ingredients
1 whole ripe banana
1 organic or fresh farm egg
3 heaped tablespoons of self raising flour
100ml of fresh milk
No sugar required (You can drizzle honey later)

Method
Place the peeled banana in a bowl and squash it to a mush using a fork.
To the bowl, add:
- 1 egg and mix until combined with a wooden spoon
- 3 tablespoons of self-raising flour one tablespoon at a time and mix until smooth
- 100ml of milk, stir to combine
Take a pancake frying pan (or a shallow regular frying pan is fine) and heat it on medium heat with a good knob of butter. When the butter has just melted, pour it into the batter mix and stir till combined.
Pop the pan back on the heat, drying off any drips of butter on the side of pan but keeping some grease in the pan. Check the pan is hot by placing your hand just above the centre of the pan. (Not too hot that the pan is smoking!)
With a ladle, put a spoonful of batter on the pan and let it form a round pancake of about 8cm diameter. You should be able to fit 3 / 4 pancakes at a time.
Allow to cook until bubbles form on the top and flip them over. Cook for a further couple of minutes until the pancake has risen a bit and it looks cooked. Repeat with the next batch. (If you have some leftover, the pancakes will keep in the fridge covered for a couple of days)
Finish with a spoonful of Riza Honey and Riza Tahini. The best breakfast to have in the morning with a hot cup of coffee. Let us know if you agree!
